The menu, developed by the partners and owners of Padoca Vegan, Renata Altheman Camargo Santos and Denise Camargo Consolmagno, also includes traditional snacks from the counter, so common in neighborhood bakeries. Vegan options range from pepperoni bread to the famous bolovo, including sausage rolls, coxinha and mortadella sandwich, which is almost a postcard of São Paulo! Renata says that one of the biggest inspirations to idealize the Vegan Paddock was the experience itself. When she started the process of transitioning to vegetarianism, almost 20 years ago, Renata found it difficult to eat outside the home. “Several times I was hungry. When you're on the street, in a hurry, you don't have anything to eat”, he recalls.

The endeavor to create a 100% vegan bakery began in 2017, when Renata, Denise and a friend founded the first version of what is now the Padoca Vegan . In the beginning, the idea of ​​the menu resembled a high-end confectionery shop, but as time went on, the need to offer “real life” options to customers gained more strength. That's when Renata and Denise decided to change the position of the enterprise, dissolved the partnership, and followed in pairs with the new Padoca Vegan.

In order to be able to offer customers tasty and totally vegan products, the team studies and tests the best ingredients to get the point right. Experiences in the kitchen always prioritize the use of ingredients from small local producers.

Vegan Paddock works within a hostel in Vila Madalena, which was Denise's grandmother's house. O Alice hostel , named after the former owner of the house, is the perfect space to receive customers who, in addition to enjoying a typical São Paulo breakfast, can meet people from different places in the world.

If one of the grandmothers inspired the welcoming of the hostel - which even has furniture and dishes from Alice's personal collection - it was with her other grandmother that Denise learned the secrets of bread. The Italian Vicenza was the one who taught how to make a real natural fermented bread, offered at the Padoca.

"Before we are a conventional bakery, we are a space for exchanging experiences. We are not inside a hostel by chance. We decided to leaven our idea here, in the Alice hostel , because we think that it is precisely the exchange of experiences that makes life tastier.
