The basic recipe consists of apple cider vinegar (which is a natural sweetener), ginger chips (or powder), honey and water. The best thing about this drink is that it combines the benefits of vinegar (improvement of the immune system and pH balance), ginger (soothes the mucous membranes of the stomach and intestine) and honey. Not to mention that it is full of minerals that provide many health benefits. All of these ingredients together work to replenish electrolytes after a bout of exercise.

- 2 cups of water.

imperial switchel recipe

- 4 liters of water at room temperature;

- 1/2 cup of molasses;

- 1 cup of granulated sugar;

- 1/2 cup of apple cider vinegar;

- 60 ml of ginger juice;

- 1 gram of champagne yeast;

- 3/4 of a teaspoon of cream of tartar (potassium bitartrate, also known as cream of tartar, is an acidic salt used during the process of fermenting grapes into wine).

1. Heat (high) two liters of water, molasses, sugar, vinegar and ginger juice and stir until boiling. Lower the temperature to medium heat and stir for 15 minutes. Then turn off the heat, let it cool and transfer to a four liter container.

2. In a measuring cup, add water and champagne yeast according to package directions. Add the mixture to the four liter container.

3. Add the cream of tartar and the remaining water to fill the four liters. Mix well to distribute yeast and other ingredients evenly.

4. Place the mixture in 500 ml bottles and cover tightly, leaving them in a dark place at room temperature for two days - then put the bottles in the fridge - do not open the bottles until they are very cold. It can be consumed in up to two weeks, if kept inside the refrigerator.

Kombucha

Of course, we couldn't fail to mention kombucha, a sweet fermented beverage that is like a natural soda, made from a combination of tea and yeast.

It is made from a colony of micro-organisms agglomerated in a thin layer of cellulose called a biofilm. Provides various acids and nutrients, excellent for health. the culture of kombucha it feeds on sugar during the process and in exchange provides valuable elements: natural antibiotics, gluconic acid, lactic acid, vitamins, amino acids and glucuronic acid. It also produces 0.5% to 1% alcohol, a very small and harmless proportion.

Basic recipe

- 1 liter of black or green tea (4 sachets);

- 1/2 cup of sugar;

- A small square of yeast;

- 1 cup of vinegar;

- 1 wide-mouth glass container;

- 1 clean cloth.

1. Prepare the tea and let it steep for 20 minutes; then, remove the sachets, add a little sugar (the less, the faster the process) and let it cool.

2. Place in glass container and add yeast square and vinegar. Cover with a cloth and secure with a rubber band around the edge (do not cover with another material to allow oxygenation) and keep away from sources of heat or light.

3. It is normal for the whitish film of the yeast to spread out and also to form a brown part - this is to be expected - the problem is circles of green (or black) mold that have a velvety appearance. If they do, discard your recipe (never drink) and start over.

In about six to 12 days, it will be ready - it's good to check, look and taste. If it has a pleasant taste, resembling a soft drink, it can already be strained and tasted. If bottling, do not close the lid too much to avoid bursting. You can add ginger or fruit to the liquid after it is strained.

Important Note: During the fermentation period, do not leave your kombucha near cleaning products or chemicals, in garbage cans where pets or children can reach, or near fruit that may become moldy.

Anabaptist (or Amish) communities

O switchel, as stated at the beginning of the article, is common in Anabaptist communities. But what are they?

In sixteenth-century Europe, there were revolutions and “reforms”, such as the Protestant, which influenced Catholic politics and religion, breaking the existing rules. The name Martin Luther is well known today, and so is the Protestant Church.

At the same time that Luther was seeking change, other religious groups also wanted to express the right to their ideologies. This was the case with the Anabaptists: Christians who believe that mandatory infant baptism is not ideal, but should be done in adulthood, when a person has the conscience to choose if he really wants it. Hence the name: ana means "again" in Greek - that is, to rename. The largest Anabaptist groups are the Hutterites, Mennonites and Amishes.

They were very persecuted at the time and sought to leave Europe, going to populate the United States and Russia.

To this day, they live like they did in the 18th century: without electricity, cars or telephones.
