Celery is a vegetable with several therapeutic properties and can be used in recipes for salads, soups or even eaten plain. Also known as celery, all parts of celery can be consumed: root, stem and leaves. Celery root is often used to prepare soups and broths; the stem, being slightly crunchy, goes very well in salads and more complex recipes, in addition to being used to decorate the famous cocktail bloody mary. The celery leaves, on the other hand, work as a seasoning and taste similar to parsley, as both vegetables contain apiol, a volatile oil that has hepatoprotective and antioxidant properties, widely used for menstrual disorders.

Rich in flavonoids, water, iron, potassium, phosphorus, calcium, sodium and vitamins B and C, celery has many health benefits, as it has diuretic, laxative, expectorant and tonic properties. Vegetable consumption strengthens the immune system and metabolism, while helping to eliminate accumulated toxins, fighting swelling. Celery is an ally in weight loss diets, as it contains few calories and lots of fiber, which increases the feeling of satiety.

Due to its rich composition, adding celery to the list of frequently consumed fresh foods is good not only to purify the body in general, as it is a diuretic, but also to control the levels of cholesterol and uric acid, whose excess will be more easily eliminated through the pee. Celery stimulates the secretion of bile acid, which is the main mechanism for eliminating bad cholesterol. The large amount of water and fiber present in the food help digestion and prevent gas and constipation, but can be harmful for those suffering from diarrhea, as it is laxative. As for apiol, celery can be used to fight phlegm, hoarseness and chilblains, in addition to strengthening cells against the action of free radicals.

Care when buying celery

When choosing which celery stalk to take home, it's important to know that the darker the color of the vegetable, the stronger its flavor. Note that the best effects are obtained through infused or cooked celery, which is a way to preserve the original flavor and up to 99% of the nutrients. Another effective way of preserving it is to cut the celery still fresh into small pieces and freeze.

Celery care

Despite bringing so many health benefits, the consumption of celery can also cause adverse reactions, like any food. People who are allergic to birch and mugwort pollen can develop allergic reactions to celery, such as itching, rash, swelling of the tongue, mouth, throat and face, dizziness, upset stomach, and even an anaphylactic reaction.

Celery also contains furanocoumarins, a compound that can cause skin photosensitivity. This is more common in farmers and people who handle a large amount of food, but there are reports of people who ate celery soup and then went out in the sun or went to a tanning salon and suffered sunburn.

Rich in water, celery works as a natural diuretic. As already mentioned, this property can be harmful for people with diarrhea and those with kidney problems should also be careful with the amount of celery they consume, as excessive consumption can tax the kidneys. Pregnant women should also avoid eating too much celery or celery seeds, as this can induce bleeding and contractions in the uterus.
