Also known as sodium hydrogen carbonate and acid sodium carbonate, bicarbonate is an alkaline salt that appears as a white or slightly pink crystalline solid. It is classified as a salt because it is highly soluble in water, but when heated to more than 50°C, it begins to decompose, releasing carbon dioxide (CO2).

The ancient Egyptians already knew the benefits of baking soda and used it as a soap for hygiene and cleaning purposes. Later, this and other peoples used it as a yeast for bread. In addition, baking soda also serves to delay changes in pH balance, which also makes it known in chemistry as a buffering agent.
